Shepherds Pie with an Irish Flair!


In honor of St. Patrick’s day, I decided to throw together my own take on a Shepherds Pie and give it a bit of an Irish flair.

Now I can honestly say that I have never had or made a traditional Shepherds Pie, but this is a recipe that I often make for my family and it uses many ingredients that you may already have on hand or can be bought inexpensively. It is a very versatile recipe and easily adjusted to suit your own family’s tastes. I have used frozen mixed veggies, frozen corn, and frozen peas and I think that I have even used the can variety a time or two. I even once tried to use a brown gravy as the “sauce” but it just did not have the zing that the Manwich gives it.

This is actually a recipe that I threw together one day, several years ago, and it really worked for our family…well depending on the type of veggies that I throw in! LOL! Lil man does not like veggies and the hubby is a bit picky about the ones he likes! We will often times either make biscuits of some sort or have bread and butter with it…but we are a family that eats a ton of bread and butter!

I made this dinner for St. Patrick’s day, I decided to add green food coloring to the mashed potatoes to add a bit of flair to the dinner. Sadly, my three color blind men just thought that the potatoes looked a bit funky, but lil miss thought that they looked cool! LOL! I also kind of think that the cheese looks a bit like gold sprinkles…don’t you think?

Instructions
  1. Brown meat, adding seasonings and soup mix. Drain excess grease. Return to pan and add vegetables and manwich, allowing to simmer for 15-20 minutes.
  2. Make instant mashed potatoes per box instructions...however you can also make your own mashed potatoes. I added green food coloring to the potatoes once they were done.
  3. Transfer meat mixture to a casserole dish or cake style pan. I used a 2 Qt casserole dish, but a 9 x13 pan would work just as well.
  4. Top with mashed potatoes bake for 10 minutes, top with cheese and continue baking for another 10 minutes.
