Oatmeal Jam Bars!


Every now and then I like to have a quick treat that the kids can grab, and these oatmeal jam bars definitely fit the bill.

They are perfect for the busy mornings, when everyone is having a late start. Wrapped in wax paper, they can easily be taken on the go, for the nights when you just need something to tide you over.

Lil man was a huge fan of these, especially when I had a little powdered sugar glaze to drizzle over the top. He kind of thought they tasted a bit like the toaster pastries that they used to get.

I personally enjoyed having one at the end of the day, a nice snack, but not too much. Maybe warmed with a bit of vanilla ice cream on top and a chocolate syrup drizzle! Yes, I know, I have a horrible sweet tooth!

Ingredients

Instructions
  1. Preheat oven to 350 and butter 9x13 baking dish.
  2. Mix together flour, oats, brown sugar, baking powder, and salt.
  3. Cut in butter with pastry cutter or food processor, until mixture forms course crumbs.
  4. Spread about half of mixture into prepared pan and press firmly to form the bottom crust.
  5. Gently spread jam/jelly of your choice over bottom crust.
  6. Add remaining crumb mixture over jam/jelly and lightly press.
  7. Bake 30 to 35 minutes, or until a light golden brown.
  8. Cut into squares and serve!
Recipe Notes

I can normally get 24 squares out of a 9x13 pan, which is the perfect size for a snack.
