The craziness has finally died down enough so that I was able to make a batch of super easy granola bars, that ended up being a huge hit! I tweaked the recipe that I had made back in June, the link can be found here.
4 C Oats
1 C Dried Fruit (Pineapple, Berry mix, & Yogurt Raisins)*
1 C Nuts (Sunflower Seeds, Salted Almonds, & Walnuts)*
1 C Semi-Sweet Chocolate Chips*
*All measurements taken after running through the food processor.
I threw the dried fruit, nuts, and chocolate chips into my lovely food processor and chopped them all up, so that lil man would eat them! Throw all of the above in a bowl.
1/2 C Butter
1 C Brown Sugar
2 t Vanilla
1/2 C Honey
1/2 C Peanut Butter
Melt the above ingredients in the microwave, then pour over dry ingredients and mix well. Grease pan and bake at 350 degrees. I used a 10×15 inch sheet pan and baked it for about 15 minutes…a 9×13 would bake for about 25 minutes.
The kids thought they were awesome! I have to admit…so did I! Let me know if you try these super easy granola bars!
