Who Doesn’t Love Doughnuts!


As promised…though a bit later to post than I had originally planned, the recipe that I promised to post for something…yummy! LOL! I love donuts, when I was pregnant with D-man I craved glazed ones! So, the other night I decided that I wanted to give making donuts for the kids’ breakfast, a shot. The only time I have ever tried to make doughnuts was by using the refrigerated biscuits, and while they were good, I really wanted to try from scratch. However, I had to find a recipe that didn’t call for yeast, so I went to my old standard…the internet, and found this recipe. I did however tweak it just a bit.

Plain Cake Doughnuts

Plain Cake Doughnuts
2 C
All Purpose Flour
1/2 C White Sugar
1 t Salt
1 T Baking Powder
1/4 t Ground Cinnamon
A Dash of Ground Nutmeg
2 T Butter
1/2 C Milk
1 Egg, Beaten
1 t Vanilla
Oil for frying.
Heat oil in deep fryer to 375 or Med/High in frying skillet.
In a large bowl, sift together dry ingredients. If you are without a sifter as I am, you can put the flour mixture into a food processor, run forks through it, or pull a whisk through it a few times.

 

Mix in butter until crumbly.
Stir in milk, egg, and vanilla until smooth, knead lightly.
Turn onto a lightly floured surface and roll or pat to 1/4 inch thickness.
Cut with doughnut or biscuit cutter.
(Since I have neither of those, I used an empty big peanut butter jar and a small lid for a plastic water bottle.)

Carefully drop into hot oil, approx 3 minutes per side or until golden brown. Drain on paper towels. Top as desired.

I really have to say that they turned out pretty good. The first batch I rolled in powdered sugar, the second I tried to come up with a chocolate glaze, but I gotta work on that one for the next time that I make them. Then again maybe I will just make a frosting…not sure, yet. It was a little runny and just not quite right. I also think that next time I will try to throw them in the over for maybe 10 minutes each side at 375. I think it will make them a bit more cake like. I will definitely make them again.
